Pongal

Pongal (the dish) is the centerpiece of Pongal (the harvest festival), offered to the sun god.

Ingredients

  • 200 g raw white rice
  • 80 g moong dal (split yellow lentils)
  • 3 tbsp ghee
  • 1 tsp cumin seeds
  • 1 tsp peppercorns, crushed
  • 1 tbsp cashew nuts
  • 10 curry leaves
  • 1 in ginger, finely chopped
  • ½ tsp turmeric
  • Salt to taste

Method

  1. Drying — Dry roast dal until lightly golden. Mix with rice.
  2. Cooking — Cook rice and dal together in 900 ml water until very soft and mushy (pressure cook 3 whistles).
  3. Heating — Heat ghee; fry cashews golden. Add cumin, pepper, curry leaves, ginger. Sizzle.
  4. Pouring — Pour over rice-dal mixture, add turmeric and salt. Mix vigorously — texture should be porridge-like.
  5. Serving — Serve hot with coconut chutney and sambar.
