Pongal
Pongal (the dish) is the centerpiece of Pongal (the harvest festival), offered to the sun god.
Ingredients
- 200 g raw white rice
- 80 g moong dal (split yellow lentils)
- 3 tbsp ghee
- 1 tsp cumin seeds
- 1 tsp peppercorns, crushed
- 1 tbsp cashew nuts
- 10 curry leaves
- 1 in ginger, finely chopped
- ½ tsp turmeric
- Salt to taste
Method
- Drying — Dry roast dal until lightly golden. Mix with rice.
- Cooking — Cook rice and dal together in 900 ml water until very soft and mushy (pressure cook 3 whistles).
- Heating — Heat ghee; fry cashews golden. Add cumin, pepper, curry leaves, ginger. Sizzle.
- Pouring — Pour over rice-dal mixture, add turmeric and salt. Mix vigorously — texture should be porridge-like.
- Serving — Serve hot with coconut chutney and sambar.
