Shrimp Moilee

Moilee is a mild, coconut-forward curry developed in Kerala's Christian communities.

Ingredients

  • 500 g large shrimp, peeled and deveined
  • 3 tbsp coconut oil
  • 1 tsp mustard seeds
  • 1 large onion, sliced thin
  • 4 garlic cloves, sliced
  • 1 in ginger, julienned
  • 3 green chilies, slit
  • ½ tsp turmeric
  • 400 ml thin coconut milk
  • 200 ml thick coconut milk
  • 2 sprigs curry leaves
  • Salt to taste

Method

  1. Heating — Heat coconut oil; splutter mustard seeds, add curry leaves.
  2. Adding — Add onion, cook until translucent. Add garlic, ginger, chilies, turmeric.
  3. Adding — Add thin coconut milk, bring to gentle simmer.
  4. Adding — Add shrimp, cook 4 min until just pink.
  5. Adding — Add thick coconut milk, heat gently 2 min. Do not boil.
  6. Serving — Serve with appam or white rice.
