Massaman Curry

Ingredients

  • 400ml coconut milk
  • 3 tbsp massaman curry paste
  • 600g beef chuck (2cm cubes)
  • 200g potatoes (cubed)
  • 1 onion (wedges)
  • 50g roasted peanuts
  • 3 tbsp tamarind paste
  • 2 tbsp fish sauce
  • 2 tbsp palm sugar
  • 3 cardamom pods
  • 1 cinnamon stick
  • 3 bay leaves
  • 1 tbsp oil

Method

  1. Heating — Heat oil; fry curry paste and dry spices 2 min.
  2. Adding — Add 200ml coconut milk; cook 5 min.
  3. Adding — Add beef; brown lightly. Add remaining coconut milk, potatoes, onion.
  4. Stirring — Stir in tamarind, fish sauce, sugar, peanuts.
  5. Simmering — Simmer covered 45–60 min until beef tender. Serve with roti or rice.
