Mi Quang (Turmeric Noodles)

Ingredients

  • 300g wide turmeric noodles
  • 300g shrimp + 200g pork belly (sliced)
  • 1 tsp turmeric
  • 2 tbsp fish sauce
  • shallots
  • garlic
  • peanut oil. **Broth:** 200ml bone broth
  • very small amount. **Garnish:** roasted peanuts
  • sesame rice crackers
  • banana blossom
  • herbs
  • lime
  • chili

Method

  1. Sautéing — Sauté shallots and garlic in peanut oil; add pork, then shrimp with turmeric.
  2. Seasoning — Season with fish sauce; add a small amount of broth — broth barely covers.
  3. Step 3 — Blanch noodles; pile in bowl.
  4. Adding — Add proteins and small amount of broth; top generously with peanuts, crackers, herbs, lime.
