Satay with Peanut Sauce

Ingredients

  • 500g chicken thigh
  • 2 tbsp coconut milk
  • 1 tbsp turmeric
  • 1 tbsp lemongrass paste
  • 1 tbsp fish sauce
  • 1 tsp sugar
  • bamboo skewers (soaked). **Peanut sauce:** 200ml coconut milk
  • 3 tbsp peanut butter
  • 2 tbsp red curry paste
  • 2 tbsp sugar
  • 1 tbsp fish sauce
  • 1 tbsp tamarind paste

Method

  1. Slicing — Slice chicken into strips; marinate in coconut milk, turmeric, lemongrass, fish sauce, sugar for 2+ hours.
  2. Step 2 — Thread onto skewers; grill or broil 4 min per side.
  3. Saucing — Sauce: heat coconut milk, whisk in peanut butter, curry paste, sugar, fish sauce, tamarind; simmer until thickened.
  4. Serving — Serve skewers with peanut sauce and cucumber relish.
