Ingredients

• 1.4kg (3 lb) Yukon gold potatoes
• 6 tbsp butter
• 1 cup warm heavy cream

• white pepper
• chives optional

Method

1. Boiling — Boil potatoes until very tender; drain thoroughly.

3. Adding — Add warm cream; whip until fluffy. Season.
