New England Clam Chowder NE-AMERICAN

Ingredients

  • 3 cans chopped clams (with liquid)
  • 4 strips bacon
  • 1 onion diced
  • 3 celery stalks
  • 3 Yukon gold potatoes cubed
  • 2 tbsp flour
  • 2 cups clam juice
  • 2 cups heavy cream
  • 1 cup whole milk
  • 1 tsp thyme
  • salt
  • white pepper
  • oyster crackers

Method

  1. Cooking — Cook bacon; remove. Sauté onion and celery in drippings.
  2. Adding — Add flour; stir 1 minute.
  3. Adding — Add clam juice, potatoes, thyme; simmer 15 minutes until potatoes are tender.
  4. Adding — Add cream, milk, clams with liquid.
  5. Heating — Heat through; season. Top with bacon bits.
