Ingredients

• 1.5 cups sugar
• ¾ cup brown sugar
• ½ cup cream
• 4 tbsp butter
• 1.5 cups pecan halves
• 1 tsp vanilla

Method

1. Cooking — Cook sugars, cream, butter to 115°C (236°F) (soft ball).
2. Removing — Remove from heat; add pecans and vanilla.
3. Beating — Beat until mixture thickens; drop spoonfuls onto parchment.
4. Cooling — Cool until set.
