Hummingbird Cake

Ingredients

• 300g flour
• 300g sugar
• 1 tsp cinnamon
• 1 tsp baking soda
• 3 eggs
• 200ml oil
• 400g crushed pineapple
• 3 ripe bananas (mashed)
• 150g pecans. Cream cheese frosting

Method

1. Combining — Combine all dry ingredients. Mix wet separately.
2. Folding — Fold wet into dry. Stir in pineapple, banana, pecans.
3. Baking — Bake in two 23cm pans at 180°C (350°F) for 30-35 min.
4. Cooling — Cool. Frost with cream cheese frosting. Top with pecan halves.
