Bánh mì is a direct product of French colonialism (1887–1954) — the Vietnamese baguette loaf is adapted with rice flour for a lighter crumb.

Ingredients

  • 1 Vietnamese baguette (shorter, airier than French). Filling: char siu pork or pâté
  • Vietnamese ham (chả lụa)
  • pickled daikon and carrot (do chua: equal parts daikon/carrot, salted, brined in rice vinegar + sugar + water)
  • cucumber slices
  • jalapeño
  • fresh cilantro
  • kewpie mayo

Method

  1. Making — Make pickles: salt daikon and carrot 30 min, rinse, brine 1 hour in warm vinegar/sugar/water. Refrigerate.
  2. Slicing — Slice baguette, spread mayo on one side, pâté on other.
  3. Layering — Layer meats, pickles, cucumber, jalapeño, cilantro.
