Bánh Mì (Vietnamese Sandwich)
Bánh mì is a direct product of French colonialism (1887–1954) — the Vietnamese baguette loaf is adapted with rice flour for a lighter crumb.
Ingredients
- 1 Vietnamese baguette (shorter, airier than French). Filling: char siu pork or pâté
- Vietnamese ham (chả lụa)
- pickled daikon and carrot (do chua: equal parts daikon/carrot, salted, brined in rice vinegar + sugar + water)
- cucumber slices
- jalapeño
- fresh cilantro
- kewpie mayo
Method
- Making — Make pickles: salt daikon and carrot 30 min, rinse, brine 1 hour in warm vinegar/sugar/water. Refrigerate.
- Slicing — Slice baguette, spread mayo on one side, pâté on other.
- Layering — Layer meats, pickles, cucumber, jalapeño, cilantro.
