Bún Bò Huế (Central Vietnamese Spicy Beef Noodle Soup)
Huế cuisine reflects the imperial court cooking of the Nguyễn dynasty — more complex and spicier than Hanoi or Saigon styles.
Ingredients
- (Broth) 1.5kg beef bones + pork hocks
- lemongrass (4 stalks pounded)
- 3 tbsp shrimp paste
- 2 tbsp fish sauce
- 2 tbsp chili oil
- 1 tbsp annatto oil
- sugar
- salt. Noodles: round rice noodles (bún). Toppings: beef brisket sliced
- pork hock
- Vietnamese ham
- onion
- scallions
- banana blossom
- bean sprouts
- lime
- perilla
Method
- Step 1 — Blanch bones, simmer 3–4 hours with lemongrass and shrimp paste.
- Seasoning — Season broth with fish sauce, annatto, chili oil, sugar.
- Slicing — Slice cooked meats, arrange over noodles in bowls.
- Pouring — Pour hot broth over. Serve with fresh herb platter.
