Bún Bò Huế (Central Vietnamese Spicy Beef Noodle Soup)

Huế cuisine reflects the imperial court cooking of the Nguyễn dynasty — more complex and spicier than Hanoi or Saigon styles.

Ingredients

  • (Broth) 1.5kg beef bones + pork hocks
  • lemongrass (4 stalks pounded)
  • 3 tbsp shrimp paste
  • 2 tbsp fish sauce
  • 2 tbsp chili oil
  • 1 tbsp annatto oil
  • sugar
  • salt. Noodles: round rice noodles (bún). Toppings: beef brisket sliced
  • pork hock
  • Vietnamese ham
  • onion
  • scallions
  • banana blossom
  • bean sprouts
  • lime
  • perilla

Method

  1. Step 1 — Blanch bones, simmer 3–4 hours with lemongrass and shrimp paste.
  2. Seasoning — Season broth with fish sauce, annatto, chili oil, sugar.
  3. Slicing — Slice cooked meats, arrange over noodles in bowls.
  4. Pouring — Pour hot broth over. Serve with fresh herb platter.
