Buddha's Delight (Lo Han Jai)

Traditionally eaten on the first day of Lunar New Year — Buddhist monks' "eighteen-ingredient" dish varied by monastery.

Ingredients

  • Lily buds (dried)
  • wood ear mushrooms
  • glass noodles
  • fried tofu puffs
  • bamboo shoots
  • napa cabbage
  • lotus root
  • jicama
  • ginkgo nuts
  • fermented bean curd (nanru)
  • sesame oil
  • soy
  • oyster sauce (or mushroom sauce)
  • garlic

Method

  1. Rehydrating — Rehydrate all dried ingredients separately.
  2. Sautéing — Sauté garlic, add fermented bean curd and mash.
  3. Adding — Add all ingredients in order of cooking time (firm → soft).
  4. Seasoning — Season with soy and mushroom sauce.
  5. Braising — Braise 20 min covered. Finish with sesame oil.
