Char Siu (Cantonese BBQ Pork)

Char siu translates "fork-burned" — pork was traditionally threaded on long forks over wood fire in ancient Cantonese cooking.

Ingredients

  • 800g pork shoulder or tenderloin. Marinade: 3 tbsp hoisin
  • 2 tbsp soy
  • 2 tbsp honey
  • 1 tbsp oyster sauce
  • 1 tbsp Shaoxing wine
  • 1 tsp five-spice
  • ¼ tsp red food coloring (optional)
  • 3 garlic cloves

Method

  1. Mixing — Mix marinade. Score pork, marinate minimum 4 hours (overnight preferred).
  2. Roasting — Roast on rack at 220°C (425°F)/220°C (425°F) 25 min, brush with extra marinade.
  3. Reducing — Reduce heat to 190°C (375°F)/190°C (375°F), roast 20 more min.
  4. Broiling — Broil 2 min for char. Slice thinly.
  5. Serving — Serve with rice or use in bao, noodles, fried rice.
