Dan Dan Noodles (担担面)

Dan dan noodles were originally sold by street vendors carrying bamboo poles (担担) — a Sichuan street food origin.

Ingredients

  • 300g wheat noodles
  • 200g ground pork
  • 2 tbsp preserved Sichuan mustard greens (ya cai)
  • 3 tbsp sesame paste or peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp dark soy
  • 1 tbsp Chinkiang black vinegar
  • 1 tsp Sichuan pepper oil
  • 1 tbsp chili oil
  • 1 tsp sugar
  • 2 garlic cloves minced
  • chicken stock
  • scallions
  • peanuts crushed

Method

  1. Browning — Brown pork with ya cai until crispy. Set aside.
  2. Mixing — Mix sesame paste, soy, vinegar, Sichuan pepper oil, chili oil, sugar, garlic, stock into sauce.
  3. Cooking — Cook noodles, drain.
  4. Placing — Place sauce in bowl, top with noodles, then pork topping.
  5. Garnishing — Garnish with scallions and peanuts. Mix at the table.
