Japchae (Glass Noodle Stir-Fry)

Japchae was invented in 1609 for King Gwanghaegun — originally had no noodles, just vegetables; glass noodles were added later.

Ingredients

  • 200g dangmyeon (glass noodles)
  • 200g beef sirloin julienned
  • 1 carrot
  • 1 bell pepper
  • 6 mushrooms
  • 200g spinach
  • 4 eggs fried into crepes then sliced. Sauce: 3 tbsp soy
  • 2 tbsp sesame oil
  • 1 tbsp sugar
  • 1 tbsp sesame seeds
  • garlic

Method

  1. Soaking — Soak noodles in water 30 min. Blanch in boiling water 5 min. Drain, season with soy and sesame.
  2. Step 2 — Blanch spinach, season with soy and sesame.
  3. Step 3 — Stir-fry each vegetable and beef separately.
  4. Combining — Combine all with noodles and sauce. Mix well.
  5. Garnishing — Garnish with egg strips.
