Massaman Curry
Massaman curry reflects the Persian and Indian Muslim merchant trade routes — introduced via Ayutthaya's international court in the 17th century.
Ingredients
- (Massaman paste) 8 dried red chilies
- shallots
- garlic
- lemongrass
- galangal
- cinnamon
- cloves
- cardamom
- cilantro
- cumin
- shrimp paste. Curry: 400ml coconut milk
- 600g beef or lamb
- 300g potatoes
- 1 onion
- 100g roasted peanuts
- 2 tbsp tamarind
- 1 tbsp palm sugar
- 3 tbsp fish sauce
- bay leaves
Method
- Simmering — Simmer curry paste in thick coconut cream until fragrant.
- Adding — Add meat, seal lightly.
- Adding — Add remaining coconut milk, potatoes, onion, peanuts, bay leaves.
- Simmering — Simmer 45 min–1 hour until meat is tender.
- Seasoning — Season with tamarind, palm sugar, fish sauce.
