Haleem

Ingredients

  • 500g mutton (boneless, cubed)
  • 200g broken wheat
  • 50g chana dal
  • 50g masoor dal
  • 50g urad dal
  • 4 onions (sliced, 2 fried golden)
  • 2 tbsp ginger-garlic paste
  • 2 tsp chili powder
  • 1 tsp turmeric
  • 1 tsp garam masala
  • 4 tbsp ghee
  • mint
  • cilantro
  • lemon
  • salt

Method

  1. Cooking — Cook dals and broken wheat with water until mushy; blend.
  2. Pressuring — Pressure cook mutton with ginger-garlic paste, spices, 1 fried onion for 6–8 whistles; shred finely.
  3. Combining — Combine shredded mutton with dal-wheat mixture; cook together 20 min, stirring vigorously until it becomes thick paste.
  4. Adding — Add ghee; adjust salt. Cook another 20 min. Consistency should be porridge-thick.
  5. Topping — Top with fried onions, lemon, mint, cilantro, ginger julienne.
