Acquacotta

Cooked water — the name tells you what Maremma shepherds had to work with. Onions, celery, and tomato simmered into a thin broth, poured over stale bread with a poached egg on top. The egg must be runny; it enriches the broth as you break it.

Ingredients

  • 1 onion, 2 celery stalks, 2 tomatoes — chopped
  • 4 eggs
  • 4 slices stale bread
  • Pecorino, grated
  • 4 tbsp olive oil
  • 1L water

Method

  1. Sautéing — Sauté onion and celery in oil until soft.
  2. Adding — Add tomatoes; simmer 10 min.
  3. Adding — Add water; bring to simmer.
  4. Poaching — Poach eggs directly in broth.
  5. Serving — Serve over bread with Pecorino.
