Panna Cotta al Cioccolato

Chocolate panna cotta from Piedmont, set softer than the plain version to account for the cocoa solids that stiffen it. Use dark chocolate with at least 70 percent cocoa. Melt it into the warm cream and strain before moulding.

Ingredients

  • 500ml heavy cream
  • 100g dark chocolate, chopped
  • 80g sugar
  • 3g gelatine

Method

  1. Heating — Heat cream and sugar; dissolve gelatine.
  2. Pouring — Pour over chocolate; stir to melt.
  3. Pouring — Pour into moulds; refrigerate 4 hours.
