Risotto ai Frutti di Mare

A seafood risotto from Italy's coasts that must never contain cheese. The shellfish broth replaces stock entirely. Cook each type of seafood separately and add it to the rice at the end so nothing overcooks. The mussels and clams go in still in their shells.

Ingredients

  • 350g arborio rice
  • 500g mixed seafood (mussels, clams, squid, shrimp)
  • 1 onion, 3 garlic cloves
  • 200ml white wine
  • 1L fish stock
  • Parsley, chilli, olive oil

Method

  1. Steaming — Steam mussels and clams; set aside. Reserve cooking liquid.
  2. Sautéing — Sauté onion and garlic; sear squid and shrimp briefly.
  3. Toasting — Toast rice; add wine.
  4. Step 4 — Build with fish stock and mussel liquid.
  5. Folding — Fold in shellfish at end; finish with parsley and olive oil.
