Risotto ai Funghi Porcini

Dried porcini give a deeper flavour than fresh ones here. Soak them in warm water for thirty minutes, then strain the soaking liquid through cloth to remove grit — this liquid is the real flavouring agent. Add it to the broth.

Ingredients

  • 350g arborio rice
  • 30g dried porcini, soaked in 500ml hot water
  • 300g fresh mushrooms, sliced
  • 1 onion, diced
  • 1L vegetable or chicken stock
  • 100g butter, 100g Parmesan
  • Thyme, white wine

Method

  1. Straining — Strain porcini soaking water; use as stock.
  2. Sautéing — Sauté onion; add fresh mushrooms and porcini.
  3. Toasting — Toast rice; add wine.
  4. Step 4 — Build risotto with stock as usual.
  5. Step 5 — Finish with butter and Parmesan.
