Risotto alla Pilota

A risotto from Mantua cooked without stirring — the rice is boiled, covered, and left alone. This method produces grains that stay separate, unlike the creamy result of constant stirring. The pork sausage and Parmesan are folded in only after the rice is cooked.

Ingredients

  • 350g vialone nano rice
  • 200g salamella sausage, crumbled
  • 1L water or light stock
  • 100g butter, 80g Parmesan

Method

  1. Step 1 — Bring water to boil; add rice and salt.
  2. Covering — Cover; cook on low until water absorbed.
  3. Meanwhiling — Meanwhile, cook sausage in butter.
  4. Pouring — Pour sausage butter over rice; add Parmesan.
  5. Wrapping — Wrap pot in towel; rest 10 min. Mix vigorously.
