Arancini (Sicilian Rice Balls)

Arancini were created in 10th-century Norman Sicily, influenced by Arab rice-cooking traditions.

Ingredients

  • 500g Arborio rice
  • saffron pinch
  • 100g Parmesan. Filling: 150g ground beef
  • 100g frozen peas
  • 100g tomato sauce. Coating: 3 eggs beaten
  • breadcrumbs
  • oil for frying

Method

  1. Cooking — Cook saffron-infused risotto. Cool completely. Mix in Parmesan.
  2. Browning — Brown beef, add peas and tomato sauce, season.
  3. Step 3 — Form rice balls around a spoonful of filling, pressing firmly.
  4. Rolling — Roll in flour, then egg, then breadcrumbs.
  5. Deep frying — Deep fry at 175°C (350°F)/175°C (350°F) until golden, about 4 min.
