Arancini (Sicilian Rice Balls)
Arancini were created in 10th-century Norman Sicily, influenced by Arab rice-cooking traditions.
Ingredients
- 500g Arborio rice
- saffron pinch
- 100g Parmesan. Filling: 150g ground beef
- 100g frozen peas
- 100g tomato sauce. Coating: 3 eggs beaten
- breadcrumbs
- oil for frying
Method
- Cooking — Cook saffron-infused risotto. Cool completely. Mix in Parmesan.
- Browning — Brown beef, add peas and tomato sauce, season.
- Step 3 — Form rice balls around a spoonful of filling, pressing firmly.
- Rolling — Roll in flour, then egg, then breadcrumbs.
- Deep frying — Deep fry at 175°C (350°F)/175°C (350°F) until golden, about 4 min.
