Chicken Tagine with Preserved Lemon & Olives

Preserved lemon (hamad m'rakad) is a Moroccan pantry staple with roots in 10th-century Arab preservation methods.

Ingredients

  • 1 whole chicken jointed
  • 2 preserved lemon quarters
  • 100g green olives
  • 2 onions grated
  • 3 garlic cloves
  • 1 tsp ginger
  • 1 tsp turmeric
  • 1 tsp cumin
  • ½ tsp saffron
  • ½ cup olive oil
  • fresh cilantro and parsley

Method

  1. Marinating — Marinate chicken with ginger, turmeric, cumin, salt, garlic, oil for 2 hours.
  2. Placing — Place in tagine or heavy pot. Add onions, saffron dissolved in ¼ cup water.
  3. Braising — Braise covered on low heat 45 min–1 hour.
  4. Adding — Add olives and preserved lemon (rind and flesh). Cook 15 more min.
  5. Step 5 — Finish with fresh herbs.
