Harissa (Moroccan Chili Paste)

Harissa was introduced to North Africa via Andean chili peppers after Spanish conquest — the Ottoman period saw its rapid spread.

Ingredients

  • 100g dried red chilies (ancho, guajillo, or local)
  • 4 garlic cloves
  • 1 tsp caraway seeds
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • ½ tsp smoked paprika
  • 3 tbsp olive oil
  • juice of ½ lemon
  • 1 tsp salt

Method

  1. Soaking — Soak dried chilies in boiling water 30 min. Drain.
  2. Toasting — Toast spice seeds in dry pan. Grind in mortar.
  3. Blending — Blend chilies, garlic, spices, lemon, oil to smooth paste.
  4. Seasoning — Season. Store covered in oil in refrigerator.
