Osso Buco alla Milanese

Osso buco means "bone with a hole" — the marrow inside is a prized element, eaten with a small spoon.

Ingredients

  • 4 veal cross-cut shanks (osso buco)
  • flour for dusting
  • 1 onion
  • 2 carrots
  • 2 celery stalks
  • 3 garlic cloves
  • 200ml white wine
  • 400g crushed tomatoes
  • 500ml veal/chicken stock
  • olive oil. Gremolata: 1 lemon zest
  • 2 garlic cloves minced
  • œ cup parsley chopped

Method

  1. Dusting — Dust shanks in flour, brown on all sides in oil over high heat. Set aside.
  2. SautĂ©ing — SautĂ© onion, carrot, celery until soft. Add garlic, wine; reduce half.
  3. Adding — Add tomatoes and stock. Return shanks. Cover, braise 1.5–2 hours at 160°C (325°F)/160°C (320°F).
  4. Making — Make gremolata, sprinkle just before serving.
