Skordalia (Garlic Potato Dip)

Ancient Greek peasant food — garlic was central to Hellenic diet and used medicinally since antiquity.

Ingredients

  • 500g floury potatoes
  • 6–8 garlic cloves
  • ¾ cup olive oil
  • 3 tbsp white wine vinegar
  • salt

Method

  1. Boiling — Boil potatoes until very soft, drain, peel.
  2. Mashing — Mash potatoes (no lumps). Beat in garlic crushed with salt.
  3. Step 3 — Alternately beat in olive oil and vinegar until smooth and creamy.
  4. Seasoning — Season. Serve at room temperature with fried fish or vegetables.
