Skordalia (Garlic Potato Dip)
Ancient Greek peasant food — garlic was central to Hellenic diet and used medicinally since antiquity.
Ingredients
- 500g floury potatoes
- 6–8 garlic cloves
- ¾ cup olive oil
- 3 tbsp white wine vinegar
- salt
Method
- Boiling — Boil potatoes until very soft, drain, peel.
- Mashing — Mash potatoes (no lumps). Beat in garlic crushed with salt.
- Step 3 — Alternately beat in olive oil and vinegar until smooth and creamy.
- Seasoning — Season. Serve at room temperature with fried fish or vegetables.
