Spanakopita (Spinach & Feta Pie)
Phyllo-based pies trace back to Ottoman Empire kitchens; the word "spanakopita" dates at least to Byzantine culinary tradition.
Ingredients
- 500g fresh spinach
- 250g feta cheese crumbled
- 2 eggs
- 1 onion finely diced
- 4 scallions sliced
- ½ cup fresh dill
- ¼ cup olive oil
- 12 sheets phyllo dough
- salt & pepper
Method
- Wilting — Wilt spinach in a dry pan, squeeze dry and chop.
- Combining — Combine spinach, feta, eggs, onion, scallions, dill, salt, pepper in a bowl.
- Brushing — Brush a 30×20cm baking dish with olive oil. Layer 6 sheets phyllo, brushing each with oil.
- Spreading — Spread filling evenly. Top with remaining 6 sheets, each brushed with oil.
- Scoring — Score top layers, brush with oil, bake 190°C (375°F)/190°C (375°F) for 45 minutes until golden.
