Jam Roly-Poly Pudding

The legendary suet roll spread with jam, boiled in a cloth — the pudding that gave its name to "dead baby" jokes in playground lore. Mrs. Beeton's recipe can be boiled or, for a quicker option, baked in the oven.

Ingredients

  • 8 ozs of flour
  • 4 ozs of finely-chopped suet
  • ½ teaspoonful of baking powder
  • 1 saltspoonful of salt
  • 2 to 3 tablespoonfuls of jam
  • Cold water

Method

  1. Make paste — Mix the flour, suet, baking-powder, and salt together. Add cold water gradually to form a stiff paste.
  2. Roll out — Roll the paste out into a long piece about ¼ inch thick.
  3. Spread jam — Spread the jam evenly over the paste, leaving a 1-inch border around the edges. Moisten the sides and far end with water.
  4. Roll up — Roll up lightly from the near end, sealing the edges as you go.
  5. Wrap — Wrap the pudding in a scalded pudding cloth and secure the ends with string.
  6. Boil — Boil from 1½ to 2 hours. Alternatively, bake in a quick oven for half that length of time.
  7. Serve — Unwrap carefully, slice thickly, and serve hot with custard or cream.
