A beloved British dish of beef steak baked in a Yorkshire pudding batter. The name is whimsical — the meat "peeps out" of the batter like a toad from its hole. Mrs. Beeton gives a straightforward recipe that proves the genius of simple ingredients.

Ingredients

  • 1 lb of beef steak, cut up small
  • 4 ozs of flour
  • ½ pint of milk
  • 1 egg
  • Salt
  • Dripping
  • Pepper

Method

  1. Make batter — Mix the flour, milk, egg, and a little salt into a smooth batter.
  2. Prepare tin — Put enough dripping into a Yorkshire pudding tin to form a thin layer when melted. Pour in about a quarter of the batter and bake until set.
  3. Add meat — Season the steak with salt and pepper, then place it on the partially set batter.
  4. Top and bake — Pour in the remainder of the batter over the meat. Bake quickly until the batter has risen and set, then more slowly until the meat is sufficiently cooked.
  5. Serve — Cut into squares, arrange neatly overlapping on a hot dish, and serve at once.
