British Fish and Chips BRITISH

Ingredients

  • 4 cod or haddock fillets
  • 1.5 cups flour
  • 1 cup cold beer (lager)
  • 1 egg
  • 1 tsp baking powder
  • salt
  • 900g (2 lb) floury potatoes for chips
  • oil for deep frying
  • malt vinegar
  • mushy peas

Method

  1. Cutting — Cut potatoes into thick chips; par-boil 5 minutes; drain and dry.
  2. Step 2 — First fry chips at 150°C (300°F) 5 minutes; drain.
  3. Making — Make batter: flour, beer, egg, baking powder, salt — mix until just combined (lumps OK).
  4. Patting dry — Pat fish dry; dip in batter; fry at 180°C (350°F) 4–5 minutes per side.
  5. Step 5 — Crank up to 180°C (350°F); second-fry chips until golden and crisp.
  6. Draining — Drain both; serve with salt, malt vinegar, mushy peas.
