Ingredients

• 1 kg waxy potatoes
• 1 onion diced
• ½ cup beef broth
• 3 tbsp vinegar
• 3 tbsp oil
• salt
• pepper
• chives

Method

1. Boiling — Boil potatoes until just tender; peel while warm; slice.
2. Mixing — Mix hot broth with vinegar, oil; pour over potatoes.
3. Folding — Fold in onion; season. Garnish with chives. Serve warm.
