Fresh Pea Soup with Mint

Pea soup has been eaten since antiquity — ancient Greeks and Romans sold it as street food, and "pease porridge" appears in English literature as far back as the 13th century.

Ingredients

  • 500g (1 lb) fresh or frozen peas
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 litre (4 cups) vegetable or chicken stock
  • 2 tbsp butter
  • 60ml (¼ cup) heavy cream
  • Small bunch fresh mint (about 20 leaves)
  • Salt and white pepper to taste
  • Extra mint and crème fraîche to serve

Method

  1. Melting — Melt butter in a large pot over medium heat. Sauté onion until soft, about 5 minutes. Add garlic and cook 1 minute more.
  2. Adding — Add peas and stock. Bring to a boil, reduce heat, and simmer 5–7 minutes until peas are tender.
  3. Removing — Remove from heat. Add mint leaves. Blend until smooth with an immersion blender or in batches.
  4. Stirring — Stir in cream. Season generously with salt and white pepper.
  5. Reheating — Reheat gently if needed. Serve topped with a swirl of crème fraîche and fresh mint.
