Sautéed Fiddlehead Ferns

Fiddleheads — the unfurled fronds of the ostrich fern — have been foraged by Indigenous peoples of northeastern North America and Japan (where they're called "warabi") for thousands of years as a vital early-spring green.

Ingredients

  • 450g (1 lb) fresh fiddlehead ferns
  • 3 tbsp unsalted butter
  • 3 cloves garlic, thinly sliced
  • 1 tbsp lemon juice
  • ½ tsp red pepper flakes
  • Salt and black pepper
  • Lemon wedges to serve

Method

  1. Step 1 — **Critical safety step:** Trim any brown papery sheaths from fiddleheads. Wash in multiple changes of cold water. Boil in generously salted water for 10–12 minutes. Drain and cool slightly. (Do not skip cooking — raw fiddleheads can cause illness.)
  2. Heating — Heat butter in a wide skillet over medium-high heat until foamy.
  3. Adding — Add garlic slices; cook 1 minute until fragrant and beginning to colour.
  4. Adding — Add drained fiddleheads. Sauté, tossing frequently, 3–4 minutes until lightly browned in spots.
  5. Squeezing — Squeeze lemon juice over; add red pepper flakes. Season with salt and pepper.
  6. Serving — Serve immediately with lemon wedges.
