Strawberry Fool

"Fool" is one of England's oldest desserts, mentioned as early as the 16th century; the name likely derives from the French "fouler" (to crush or press), describing how the fruit is treated.

Ingredients

  • 500g (1 lb) fresh strawberries, hulled
  • 3 tbsp superfine sugar, divided
  • 1 tsp vanilla extract
  • 300ml (1¼ cups) double (heavy) cream
  • 2 tbsp icing (powdered) sugar

Method

  1. Reserving — Reserve a handful of strawberries for garnish. Slice the rest and toss with 2 tbsp superfine sugar. Let macerate 20 minutes until juicy.
  2. Mashing — Mash or briefly blitz macerated strawberries to a rough purée (leave some texture).
  3. Whipping — Whip cream with powdered sugar and vanilla to soft peaks.
  4. Step 4 — Gently fold strawberry purée through cream in three additions, leaving streaks visible — don't overmix.
  5. Step 5 — Spoon into glasses. Chill 30 minutes. Garnish with reserved strawberry slices.
