Thai Boat Noodles (Kuay Teow Rua)

Ingredients

  • 1L pork or beef bone broth
  • 200g pork balls
  • 100g pork liver (sliced)
  • 200g thin rice noodles
  • 2 tbsp dark soy sauce
  • 2 tbsp fish sauce
  • 1 tsp fermented bean curd
  • 1 tbsp palm sugar
  • 1 tsp five-spice powder
  • 1 cup pork blood (optional)
  • bean sprouts
  • green onion
  • fried garlic
  • pork cracklings

Method

  1. Simmering — Simmer broth with dark soy, fish sauce, fermented bean curd, sugar, five-spice 20 min.
  2. Adding — Add pork blood if using; simmer 5 min.
  3. Step 3 — Blanch noodles and bean sprouts in boiling water; drain into bowl.
  4. Adding — Add pork balls and liver to broth; cook 3 min.
  5. Ladling — Ladle broth and meats over noodles. Top with green onion, fried garlic, cracklings.
