Cottage Pudding
- Ingredients
- 2 tablespoons butter
- ¼ cup sugar
- 1 egg
- ¾ cup flour
- 1 teaspoon baking-powder
- ⅛ teaspoon salt
- ¼ cup milk
- ½ teaspoon vanilla

- 2 bowls

- Dover beater
- Sifter
- Cake-pan
- Directions
- "Cream" the butter in a mixing-bowl.
- Add the sugar, and "cream" again.
- Break the egg, adding the yolk to the butter and sugar and putting the white in a separate bowl.
- Beat the egg with the sugar and butter.
- Sift the flour, baking-powder, and salt together.
- Beat the egg-white and "fold" it into the mixture.
- Pour the mixture into a buttered cake-pan, and bake from twenty to thirty minutes in a moderate oven. Serve with Vanilla, Lemon, or Strawberry Sauce.
